1 lb. stir fry beef strips or london broil
2 tbsp reduced sodium soy sauce
4 tsp Oriental dark sesame oil, divided
1 1/2 tsp sugar
1 tsp. cornstarch
1/4 tsp crushed red pepper pods (crushed red pepper
will do)
2 cloves garlic, minced
1 tbsp minced fresh ginger
1 small onion cut into bite sized pieces
1 red bell pepper cut into bite sized pieces
1/4 lb pea pods, julienned (if not available or not
in season, frozen peas work too)
If you have to cut the beef into strips yourself,
cut steak lengthwise into 2 strips. Cut each strip across the grain into 1/8
inch strips.
Combine soy sauce, 2 tsp oil, sugar and cornstarch;
pour over meat, tossing to coat.
Heat remaining 2 tsp oil in wok or large nonstick
skillet over medium high heat until hot.
Add red pepper, garlic and ginger;
cook 30 seconds.
Add bell pepper and onion; stir-fry 1 1/2 minutes.
Add pea
pods or peas; stir-fry 30 seconds.
Remove vegetables from pan; reserve.
Stir-fry beef strips, half at a time, 2 to 3
minutes.
Return vegetables and beef to pan and heat through.
Serve
immediately.
Makes 4 servings.
