Ingredients:
4 boneless, skinless chicken breasts
1 egg
4 cups corn flakes
parsley
salt
pepper
cooking oil
Directions:
*use blender or hand crush 4 cups of corn flakes
*place crushed corn flakes in medium size bowl; season with parsley, salt,
pepper (to taste) -- set aside
*beat one egg in a bowl -- set aside
*rinse chicken breasts and pat dry
*cut chicken breasts into strips ('fingers')
*place chicken fingers in bowl with beaten egg; completely cover chicken with
beaten egg mixture
*remove chicken fingers from beaten egg mixture; place in bowl with seasoned
crushed corn flakes; completely cover all chicken fingers with corn flakes
mixture
*add cooking oil to medium size skillet; place on high heat
*test cooking oil temperature by adding a cornflake -- when corn flake quickly
fries to a crisp; add chicken fingers
*fry on high heat until crispy and
golden brown; remove from skillet and place on paper towels to drain
*serve with your favorite honey mustard, or barbecue sauce
*makes four servings
